Low Vitamin A Beef and White Rice Skillet Recipe
A hearty, one-pan meal perfect for your low vitamin A diet – tender beef with fluffy white rice, seasoned with rosemary for a simple yet satisfying dish.
Ingredients (Serves 2):
- 8 oz beef steak (e.g., sirloin, muscle meat, no liver)
- 1 cup white rice (unfortified)
- 2 tbsp Chosen Foods avocado oil
- 1 tsp dried rosemary
- 1 tbsp lemon juice (fresh, not peel)
- Salt to taste
- 2 cups water (for cooking rice)
Instructions:
- Cook the white rice: In a pot, bring 2 cups of water to a boil, add the rice, reduce heat to low, cover, and simmer for 15-20 minutes until tender. Set aside.
- While the rice cooks, heat 1 tbsp avocado oil in a skillet over medium heat. Slice the beef steak into thin strips, season with salt and rosemary, and add to the skillet. Cook for 3-4 minutes per side until browned and cooked through (internal temperature 145°F/63°C for medium).
- Add the cooked white rice to the skillet with the beef. Drizzle with lemon juice and the remaining 1 tbsp avocado oil, stirring to combine. Cook for 2 more minutes to blend flavors.
- Serve hot, dividing between two plates.
